A bright, zesty, flavour-packed taco recipe using Squeaky Bean Cajun Mini Fillets and Squeaky Bean Cooking Chorizo Style Sausage

Ingredients
For the filling
1 tbsp olive oil
1 pack Squeaky Bean Cajun Mini Fillets, roughly chopped
1 pack Squeaky Bean Cooking Chorizo Style Sausage, sliced
1 tsp smoked paprika
½ tsp cumin
Pinch of salt + pepper (to taste)
Warm soft tacos (corn or mini flour)
Optional toppings
Vadasz Picked Onions
Fresh coriander, chopped
Lime wedges
Chipotle mayo
Sliced avocado
Charred corn
A sprinkle of crunchy fried onions
Method
1. Cook the chorizo + Cajun mini fillet pieces
Heat the olive oil in a pan over medium heat.
Add sliced Squeaky Bean Cooking Chorizo and fry for 3–4 minutes until it starts to crisp.
Add the chopped Cajun Mini Fillets, smoked paprika, cumin and salt and pepper.
Stir and cook for another 2 minutes until everything is sizzling and golden.
2. Warm your tacos
Toast them in a dry pan for 20–30 seconds each side until soft and flexible.
3. Build the tacos!
Assemble your tacos with the toppings of your choice. Squeeze over lime and enjoy!
