Our pesto fridge raid pasta is an easy peasy way to create a healthy, comforting meal, and use up any fridge leftovers. Our juicy Moving Mountains Meatballs take centre stage and are a delicious source of protein packed flavour. Paired with your favourite pasta, you have yourself a filling and easy meat free meal.

Ingredients
200g Moving Mountains Meatballs (2/3 of a pack)
300g Pasta
100g Pesto (half a jar)
200g whatever vegetables you have rolling around your veg drawer. THIS IS YOUR FRIDGE RAID! – our favourite is cherry tomatoes, but let's face it, there's always some sad, wilting spinach in there too.
Parmesan or a vegan cheese of your choice
Salt, pepper and olive oil to taste (for an extra kick add dried chilli flakes!)
Method
Start by bringing a pan of water to a boil, then add a splash of olive oil to a frying pan and heat it to medium.
Add 300g of pasta and a pinch of salt to your boiling water and cook to your taste. Whilst your pasta cooks, start frying your Moving Mountains Meatballs in your preheated pan. Cook for approximately 15 minutes, turning regularly until evenly browned.
Once your pasta and Moving Mountains Meatballs are cooked, drain the pasta (save some pasta water for the sauce) and mix the meatballs, pasta, a splash of pasta water, and the pesto together. Add seasonings to taste (salt, pepper, olive oil, chilli flakes – if using) and mix thoroughly, ensuring all pasta is coated.
Rinse, chop and add your veg
Serve with a sprinkle of your favourite vegan cheese or parmesan and enjoy!
