Ingredients
1 tomato, chopped
½ cucumber, chopped
½ small red onion, thinly sliced
2 handfuls of leafy greens – we went with a handful of rocket and a handful of spinach, but feel free to use whatever you’ve got in the fridge!

100g Tofoo Lightly Spiced Pieces
Dressing of your choice (optional)
Method
Prepare the Veg:
Wash and chop the tomato, cucumber, and onion. Roughly tear or chop the rocket and spinach.
Build the Salad:
Place all the chopped vegetables in a large bowl and gently toss together. Scatter the crumbled falafel and Tofoo pieces over the top.
Serve:
Transfer to a serving dish or plate. Drizzle with your favourite dressing if desired, and enjoy immediately.
